04 Caramelized Onions

Caramelized Onions

Makes: 1 cup

Ingredients:

2 tablespoons unsalted* butter
2 medium yellow onions, halved and sliced paper thin (about 4 cups)
Kosher salt*
Freshly ground black pepper

If *salted butter is used, reduce/skip the salt.

Instructions:

1. Melt the butter in a large frying pan over medium-low heat until foaming.
2. Add the onions, and let them cook, stirring rarely, until they are deep golden brown and caramelized, about 45 minutes.
3. Season well with salt and pepper, remove from the pan, and let cool.

The original recipe's note: Caramelized onions add a sweet and savory note to anything they top. Try them over grilled chicken or with cheese on your next pizza.

Like anything that calls for extended cooking time, I usually zap sliced onions in the microwave on High until translucent (40-50 seconds per manageable batch, in my 1400W oven) before caramelizing them.

Some recipes call for additional sugar; I don't think you need it.
Shallots can be caramelized the same way.
A little balsamic vinegar will give you some extra flavor.
