22 Ice Cream Pie (from ADelhiCocoa)

ADelhiCocoa would like to emphasize that "the key to indulgence is moderation!!!" She sent her super easy and tasty ice cream pie recipe as follows:

Ingredients:
Crust:
2 oz. semi-sweet chocolate (2 baking squares)
4 Tbsp butter
2 cups Rice Krispies, or any plain crispy rice cereal but not the puffy kind

Filling:
Mint chocolate chip ice cream, sugar-free if needed

Direction:
1. Melt the chocolate and the butter in a double boiler (or in a mixing bowl sitting in hot water).
2. Add the cereal, mix gently and thoroughly.
3. Pat the cereal batter in a pie dish and freeze.
4. Fill the shell with ice cream and freeze again till ready to serve.

I don't have the rice crispy kind of cereal but the oat cluster type, so I'll use that for two small tarts and fill with Mocha Almond Fudge ice cream. This should make a perfect Sunday dinner when served with a generous piece of whipped-cream-and-Hershey's-topped macadamia brownie, a banana on the side, and a cup of hot cocoa. Is this moderate enough? :-D
