A BBC article on onions made me crave for my favorite onion snack, the onion rings. A search yielded 3 recipes with 5-star ratings and 2 others that look delicious. I haven't tried any of them yet (still waiting for an air-fryer as a Christmas present). Yes, I know that the flavor is in the grease, but I can't afford too much fat intake for personal health reasons. >:-{

01 Beer Battered Onion Rings

Ingredients:
4 cups canola oil or peanut oil
1 cup sour cream
3/4 cup mayonnaise
3 tablespoons sun-dried tomatoes
1/4 cup red bell peppers, roasted
1 tablespoon lime juice
1 1/2 teaspoons pepper, fresh cracked
2 teaspoons salt
3 tablespoons white wine
1 tablespoon garlic, minced
2 yellow onions, sweeter the better, Vidalia or Texas sweets
2 cups buttermilk
2 cups all-purpose flour, divided
1 teaspoon garlic, granulated
12 ounces beer, medium body
3 tablespoons grated Parmesan
Directions:
In a Dutch oven heat oil to 350 degrees F.
In a food processor combine sour cream, mayonnaise, sun-dried tomatoes, red bell peppers, lime juice, 1/2 teaspoon pepper, 1 teaspoon salt, white wine and minced garlic, cover and refrigerate for 1 hour.
Cut onions 1/2-inch thick, remove dark exterior of onions, separate into rings and soak in buttermilk for 1 hour.
Combine 1 cup of flour, remaining salt, pepper, and garlic, mix thoroughly. In a medium bowl combine beer and 1 cup of flour, mix thoroughly.
Remove onion rings from buttermilk, shake off excess, dredge in flour, shake off excess, then dip in beer batter. Drop some onion rings in oil and continue process, being sure not to crowd rings as they will stick together. When golden, remove and let drain on paper towels.
Garnish with Parmesan.

You can rustle up these crispy bites with a few storecupboard ingredients - sparkling water is the key to a really light batter
Ingredients:
• 1 large onion, cut into 1cm slices, rings separated
• groundnut oil, for deep frying
• 150g self-raising flour
• 180ml sparkling water
Method:
1. Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
2. Heat the oil to 180C in a heavy-based pan – it should be no more than 1/ 3 full.
3. Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
4. Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

03 Crispy Fried Onion Rings

Ingredients:
• 1/2 cup all-purpose flour
• 1/2 cup water
• 1 egg, lightly beaten
• 1 teaspoon seasoned salt
• 1/2 teaspoon baking powder
• 1 large onion, very thinly sliced
• Oil for deep-fat frying
Directions:
In a shallow bowl, whisk the first five ingredients.
Separate onion slices into rings.
Dip rings into batter.
In a deep-fat fryer, heat 1 in. of oil to 375°F.
Fry onion rings in batches for 1 to 1-1/2 minutes on each side or until golden brown.
Drain on paper towels. Serve immediately.

Onion rings
red onions 2
white onions 2
malt vinegar 250ml
sunflower oil for frying
plain flour for dusting, seasoned
white breadcrumbs 100g
salt and freshly ground black pepper
For the batter
lager 330ml
flour 160g
cayenne pepper a pinch
soy sauce a dash
salt and ground white pepper
Peel the onions and cut into rings of 1cm width. Place into a tray, pour over the vinegar and marinate for 3 hours.
To make the batter, pour lager into a large mixing bowl and gently whisk in flour until you get a smooth, silky consistency (you may need more or less flour). Add cayenne, soy sauce and seasoning. Leave in the fridge till ready to use. This can be made 30 minutes to an hour before needed.
Pour 6cm oil into a medium-sized, heavy-bottomed saucepan, or use a deep fat fryer. Heat to 180C. If using a saucepan, be careful as the oil will be very hot. Drop the onion rings into the seasoned flour, then the batter, then the breadcrumbs. Fry until golden brown. Remove with tongs and place on kitchen paper. Season and serve.

05 Oven Fried Onion Rings

Ingredients:
2 cups all-purpose flour
2 teaspoons paprika
1 Tbsp pink Himalayan salt
1 tsp freshly ground black pepper
2 cups buttermilk
3 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large Vidalia onions, sliced into 1/4″ thick rings
Directions:
1. Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
2. In a small bowl, combine the flour, paprika,1.5 tsp salt, and 1/2 tsp pepper. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
3. In a separate bowl, combine the panko, olive oil, remaining 1.5 tsp salt, and 1/2 tsp pepper.
4. Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
5. Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.
