04 Strawberry Salsa

P.S. EverybodySez said strawberries are no longer in season. LOL I'm so sorry. I practically live off the frozen kind and wasn't aware of the fact. :-} Please enjoy if you are lucky enough to have real fresh ones from farm or supermarkets.



Strawberry Salsa

Makes 2 cups

1 quart strawberries, cut into 1/2-inch pieces
1 tablespoon minced jalapeno pepper (with seeds)
1 tablespoon finely chopped red onion
1/2 cup chopped cilantro
1 tablespoon fresh lime juice
1 tablespoon olive oil (or sesame oil)
1/4 teaspoon salt
1/2 teaspoon sugar

Mix lime juice and oil; add in salt and sugar and dissolve.
Add to the combined fresh produce in a medium bowl; mix well.

Serve with blue corn chips or atop grilled fish.

NOTE from P.: I would add some diced bell pepper for extra crunch and sweetness, and some balsamic vinegar.
